Hello Eli Sherer,
In the Create Theme Colors dialog box, select the colored box next to either Hyperlink or Followed Hyperlink to change that color setting. The Colors dialog box opens. There are several tabs in the dialog box that give you different ways to choose the color you want: a color wheel, slider bars, a palette of colors, or pencils. As a foreword, I am running the most up-to-date versions of macOS Mojave, Outlook for Mac, GoToMeeting Scheduler, Zoom and BlueJeans Outlook add-in. The current issue is when you click Schedule from the menu bar GoToMeeting Scheduler application on macOS, the meeting information that is pasted in to an Outlook Meeting does not format correctly. The Stack Exchange Q&A format is different from your typical forum, it's not meant for discussion. For more information please see our Help section. Consider deleting this as it will likely continue to attract down votes for not being a direct answer to the question or improving it to be a direct answer.

Thanks for the question. Let’s check to see if Smart Links are enabled in your Edit > Substitution preferences when composing a new email. For more information, see the following resource:

Use smart links
Automatically convert URLs or other strings to clickable links. For example, “www.apple.com” is converted to a link that opens that website. Or “mailto:[email protected]” is converted to a link that creates an email message for Anne Johnson.
Set an app to always use smart links: In a document, choose Edit > Substitutions, then choose Smart Links (a checkmark shows it’s on). To turn it off, choose the command again.
Apply smart links to existing text: To use smart links in part of a document, select the text, choose Edit > Substitutions > Show Substitutions, select the Smart Links checkbox, then click Replace in Selection. To use them in the entire document, click Replace All.
